Easter is just around the corner so the time is now to start thinking about your décor and what will be in the menu. Here are a few decorating tips that we came across that we thought we would share. Also, Amanda’s grandmothers Carrot Cake recipe that will not disappoint.

Carrot Cake, Even those who don’t like carrots will love this!
CAKE
2 Cups Flour
2 Cups Sugar
2 tsp cinnamon
½ tsp salt
1 tsp baking powder
2 tsp baking sode
4 eggs
3 Cups grated carrots
1 tsp vanilla
1 ½ cups corn oil
Mix dry ingrediants, add others and blend well. Bake in cupcake pans with liners @ 350 for 25 min. makes about 2.5 dozen. OR bake in (3) 9” round pans, flour pans @ 350 for 30 min. Cool before removing from pan.
FROSTING
1 8oz package cream cheese
1 stick butter
1 box powdered sugar
1 T vanilla
Sprinkle with finely chopped peans, and they are ready to eat!
